Ingredients
- Udon noodles
- Boiling water
- 450g salmon fillet
- Diced tomato
- Diced capsicum
- Corn kernels
- Edamame
- Diced avocado
- Shredded carrot
- Sesame dressing

Method
- Place salmon fillets in fan forced oven at 180 degrees for approx 20 minutes
- Whilst the salmon is cooking bring a pot of water to the boil and add the udon noodles and cook for 5 minutes approximately before draining the water
- Whilst the noodles are cooking dice tomato, avocado, capsicum, strain the tinned corn, shred the carrot and open the edamame
- Add noodles first, then salmon, then the remaining ingredients for an easy healthy dish. Drizzle sesame dressing for additional flavour
