Ingredients
- 2 cups Obento sushi rice
- 400g sashimi grade fresh tuna
- 1 cup edamame
- Small can sweet corn
- Oakleaf lettuce
- Roasted snack seaweed
- Kupie mayonnaise
- Lee Kum Kee premium soy sauce
Method
- Cook rice as per instructions on packet - allow half a cup per person
- Wash lettuce and shake off excess water
- Cook edamame and corn in separate bowls covered in water, for 3 minutes on full power in microwave
- Thinly slice tuna across the grain
- Place ingredients in bowl. Add cooked rice with mayo on top, then arrange other ingredients. Serve with Lee Kum Kee premium soy sauce, a lovely light soy sauce
- Notes: avacado, silken tofu and thinly sliced Spanish onion are delicious additions, as is chilli or Kupie sriracha mayo. The use of snack seaweed will add a mild delicious seasoning to the dish, use sushi seaweed if preferred. Omit fish for a vegetarian option or replace with meat if desired.
