Theme: One Bowl Wonder
Pork and Mushroom Udon Noodles

Ingredients
- 2 tablespoons vegetable oil
- 500g pork mince
- 2cm piece of ginger, grated
- 200g mixed mushrooms including shiitake, sliced
- 500g wombok cabbage finely sliced
- 50ml soy sauce
- 50ml obento mirin
- 50ml sake
- 400g dried udon noodles, slightly under-cooked and drained
- Sesame oil, sliced spring onion. sesame seeds and chilli oil to serve

Method
- Heat 1 tsp oil in wok and stir fry pork mince until browned. Set aside.
- Heat remaining 1 tsp oil in wok and stir fry mushroom and ginger for 3 minutes. Add wombok and stir fry for 2 minutes.
- Return the mince to the pan and add soy mirin and sake. Simmer for a few minutes until the cabbages is cooked.
- Add noodles to the wok and toss until well coated.
- Serve topped with sesame seeds, sesame oil and spring onion and with chilli oil on the side.
