Pork and Udon Noodle Stirfry

Ingredients
- 1tbs peanut oil
- 500g pork mince
- 1 shallot, finely chopped
- 2 garlic cloves, minced
- 1cm piece Ginger, minced
- 1 tsp freshly ground black pepper
- 1 carrot, coarsley grated
- 270g Hakubaku Udon Noodles
- 2tbs soy sauce
- 1tsp dark soy
- 2 tbs hoisin sauce
- 2 tbs Sweet chilli sauce
- 2 tbs Chinese cooking wine
- 1 tbs sesame oil
- 1/4 tsp chilli flakes
- 1/2 cup water
- 1 chicken stock cube
- 2 tsp corn flour
- 2 Spring onions
- Toasted sesame seeds

Method
- Add Soy sauce, dark soy sauce, hoisin sauce, Sweet chilli sauce, Chinese cooking wine, Sesame oil, chilli flakes, water, chicken stock cube and corn flour into a small bowl and mix
- Rapidly boil water, cook udon noodles for 8 minutes, drain and rinse with cold water, drain again and set aside
- Heat peanut oil in a wok, add Pork mince and stirfry until golden brown
- Add shallots, garlic, ginger and black pepper to pork, stir fry for 2 minutes
- Add green beans and carrot and stir fry for 2 minutes
- Add stirfry sauce, simmer for 4 minutes then add drained udon noodles, stir fry fir another 2 minutes
- Serve with green onions and Sesame seeds
