Pork mince, creamy coconut noodles

Ingredients
- Pork mince
- Rice noodles
- Broccoli
- Coconut milk
- Carrot
- Ground ginger
- Red curry paste
- 1 small onion
- 2 x crushed garlic clove
- Honey
- Peanut butter

Method
- Heat desired oil in pan.Start browing off onion and garlic...cook for 1-2 minutes
- Add mince....continue to stir,Turn down heat in preparation for next steps.... cut up broccoli and carrot and add these In with the mince.
- In a glass bowl add 300ml coconut milk, 3tsp curry paste, 1 tbsp honey, 3tbsp Peanut Butter, 2tbsp white vinegar, mix all together into thickish paste.
- Boil water, add dry noodles, let sit for 3-5mins
- Add cooked in noodles and coconut paste into pan with mince and veggie....let simmer for 10minutes to help flavours all pop.To serve add a slice of lemon or lime, top with crushed nuts if desired....sit back and enjoy with a good cup of green tea💓
