Pork rice noodle salad

Ingredients
- Fish sauce half a cup
- 2 Limes juiced
- White sugar half a cup
- 2 garlic cloves
- Pork loin 250grams
- 1 cup thin red cabbage
- 1 cucumber thinly sliced
- 2 carrots thinly sliced
- 2 spring onions thinly sliced
- Thai basil
- Coriander
- Mint
- Honey chilli cashew nuts or peanuts
- Chilli flakes
- Rice noodles
- Rice vinegar splash
- Half cup hot water

Method
- Make sauce by chopping garlic finely making a simple syrup with hot water and sugar, add fish sauce and lime juice and chilli flakes to desired taste. Set in fridge
- Season pork with a pinch of salt and pepper . Pan‑sear in a hot skillet 2‑3 min each side until cooked through. Set aside to rest, then slice thinly.
- Add chopped thin cabbage, carrot, cucumber, spring onions to bowl with splash of rice wine vinegar
- Cook rice noodle pack as directed. Then run under cold water and add to vegetables.
- Add fresh chopped herbs and mix through
- Add pork and sauce in fridge mix well
- Topped with chopped cashew nuts and chilli sauce on side if desired
