Pork rolled in soya bean sheets with spicy black bean glaze

Ingredients
- 500 grms pork mince
- Half a small carrot diced
- 5 pieces diced water chestnut
- 1 Tbsp grated ginger
- 1 clove of garlic minced
- 1 Tbsp Lee Kum Kee soy Sauce
- 1 tsp brown sugar
- 1 tsp of sesame oil
- 1 Tbsp Spring onion
- Soya bean sheets – can be dried or frozen
- 1 Tbsp Lee Kum Kee Black Bean Garlic Sauce
- 1 Tbsp Lee Kum Kee Chilli Bean Sauce
- 1 tbsp brown sugar
- 1 Tbsp rice vinegar
- 1 tsp Lee Kum Kee Chiu Chow Chilli Oil
- 3 Tbsp water
- 1 Tbsp Lee Kum Kee Black Bean Garlic Sauce
- 1 tsp Lee Kum Kee Chilli Bean Sauce
- 1 tsp Lee Kum Kee Soy sauce
- 1 tsp Lee Kum Kee Chiu Chow Chilli Oil
- 1 tsp brown sugar
- 1 Tbsp rice vinegar
- 2 Tbsp hot water
- 3 cucumbers shaved into ribbon
- 1 tsp salt
- 1 Tbsp rice vinegar
- 1 tsp sugar
- 1 tsp lime juice
- 1 tsp soy sauce

Method
- Mix pork mince, carrot, water chestnut, garlic, ginger, soy sauce, sugar, sesame oil and spring onion. Lightly wipe soy bean skin with a damp cloth Place spoonsful of pork mixture in a line on the soya bean skin and roll Place some oil in a pan and on a medium-low heat brown each side Lower heat and cover with a lid, and let it cook and steam under lid for 8 mins Remove lid.
- Combine basting mixture in a small pan and stir till thick with low heat 1 Tbsp Lee Kum Kee Black Bean Garlic Sauce1 Tbsp Lee Kum Kee Chilli Bean Sauce1 tbsp brown sugar1 Tbsp rice vinegar1 tsp Lee Kum Kee Chiu Chow Chilli Oil 3 Tbsp water Add rolls and coat with basting sauce
- Mix all sauce ingredients and serve1 Tbsp Lee Kum Kee Black Bean Garlic Sauce1 tsp Lee Kum Kee Chilli Bean Sauce1 tsp Lee Kum Kee Soy sauce1 tsp Lee Kum Kee Chiu Chow Chilli Oil 1 tsp brown sugar1 Tbsp rice vinegar2 Tbsp hot water
- 3 cucumber shaved into ribbon 1 tsp salt 1 Tbsp rice vinegar 1 tsp sugar 1 tsp lime juice 1 tsp soy sauce Put cucumber and salt together and toss and let sit for 15 minsRinse and pat dry with paper towel Mix all other ingredients together and toss into cucumber
