Prawn and avocado Sushi rolls

Ingredients
- 2 cups Sushi rice
- 12 prawns (cooked)
- Avocado (sliced)
- Carrot (cut into sticks)
- 6 Nori sheets
- 3 tbsp Rice wine vinegar
- 1 tbsp caster sugar
- Mayonnaise

Method
- Cook sushi rice according to packet instructions. Add rice wine vinegar and sugar. Spread out on tray to cool.
- On a sushi mat, lay out Nori sheet. Then cover bottom three quarters with a thin layer of rice
- Add a thin layer of mayonnaise to the bottom quarter section. Then arrange carrot sticks, avocado, prawns along the mayonnaise strip.
- Starting at the bottom, slowly but firmly roll the sushi in a upwards direction. Once complete, cut sushi roll into bite size pieces.
- Serve with small bowls of soy sauce, pickled ginger, wasabi. Enjoy!
