Method
- 1️⃣ Soak the noodlesSoak rice noodles in warm water for 20–30 minutes until soft but not mushy. Drain.2️⃣ Make the sauceMix together: • 3 tbsp tamarind paste • 2 tbsp fish sauce • 2 tbsp palm sugar (or brown sugar) • 1 tbsp soy sauceStir until combined.3️⃣ Cook the prawnsHeat oil in a pan or wok.Cook prawns for 1–2 minutes each side until just pink.Remove and set aside.4️⃣ Cook the baseIn the same pan: • Add a little oil if needed. • Cook minced garlic for 10 seconds. • Push to the side and scramble 2 beaten eggs.5️⃣ Add noodles & sauceAdd drained noodles.Pour in sauce.Toss and cook for 3–5 minutes until noodles are soft and glossy.If dry, add a splash of water.6️⃣ FinishAdd: • Cooked prawns • Fried tofu • Bean sprouts • Spring onionsToss for 30 seconds.⸻🌿 Serve withTop with crushed peanuts, fresh coriander, chilli flakes, and a lime wedge.That’s it — simple, glossy, and competition-ready ✨
