Prosperity Yam Ring with Kung Pao Prawn & Chicken

Ingredients
- Yam Dough -350 gms yam also known as Taro (cut into thin slices), 3/4 tsp salt, 1 tsp sugar, 1/2 tsp ground sichuan pepper, 1/2 tsp five spice powder, 35gms soften butter, 60gms wheat flour, 3 tablesp boiling water. Sufficient oil for deep frying.
- Kung Pao Prawn & Chicken - 8 dried chilli, 350gms chicken breast, 8 prawns, 4 shitake mushrooms ( sliced) 100gms firm fried tofu ( cut into small wedsges) 1 inch ginger (sliced), 1 medium onion (cut into wedges), 2 cloves garlic ( chopped), 3 shallots cut into 1 inch length, 50gms roasted peanuts, 1 tsp sichuan pepper, 1/2 red capsicum ( sliced) & 3 tablespoon oil for frying. .
- Marinate for Prawn & Chicken- 1 teaspoon light soya sauce, 1 tsp sesame oil & 1 tablesp Shaoxing cooking wine, 1/2 tsp salt & 1/2 tsp cornflour.
- SAUCE- 2 tablesp Hoisin sauce, 1 tsp light soya sauce, 1 tablesp balsamic vinegar & 1 tablesp rice wine vinegar. Mis it all up in a small bowl. Mix 1 tsp cornflour & 2 tablesp water in a bowl for thickening sauce.
- Garnish - 40gms bean vermicelli ( deep fried in hot oil) & coriander

Method
- Yam Ring - Steam yam in steamer for 20mins. Remove & mash it into a smooth paste while hot in a big bowl. Add salt, sichuan pepper, sugar, butter, five spice powder. Mix wheat starch with 5 tablesp of hot water.in a separate bowl. Add this mixture into the yam paste. Knead it & shape dough into two 6ins ring. Leave it in fridge for 30 mins to firm it.
- Meanwhile prepare Kung Pao Prawn & Chicken. Remove shell & devein prawns & cut chicken breast into small cubes. Marinate prawns & chicken pieces in a bowl with the listed ingredients for marinate. Soak dried chilli for 5 minutes with boiling water & remove seeds.
- Fry the 2 Yam Ring - Heat up enough oil for deep frying in a pot or deep frying pan. When oil is hot, slowly slide yam ring & fry till crispy & golden brown. Put the yam ring on top of the fried bean vermicelli on a plate.
- Kung Pao Prawn & Chicken- Heat up 3 tablesp of cooking oil in a frying pan, when hot add chopped garlic, sliced ginger & onions., fry till fragrant, Add chicken pieces, fry for about 3 mins, add prawns, tofu, shitake mushrooms & the rest of the ingredients. Fry for 2 minutes. Add the SAUCE, stir it & add the cornflour mixture to thickened sauce.
- Fill the hole of the Yam Ring on the plate of fried bean vermicelli with Kung Pao Prawn & Chicken. Garnish with coriander.
