Quick and easy sushi rolls

Ingredients
- 1 cup sushi rice
- 3 tbs mirin
- Kewpie mayo
- 1 small carrot
- 1 small Lebanese cucumber
- 1 avocado
- 1 packet of marinated tofu
- 1 packet of nori sheets
- Tamari or soy sauce (to serve)

Method
- Cook the sushi rice according to instructions. Once cooked, flavour with mirin and allow to cool. While the rice is cooking, lightly sear the tofu.
- Chop the carrot, cucumber and avocado into strips.
- Take one sheet of nori and spoon rice onto the middle. Shape the rice into a thin rectangle and layer the tofu, avocado, carrot and cucumber on top. Drizzle with kewpie mayo, and then roll into a sushi log. You may need some water to seal the edge of the nori sheet.
- Cut the sushi log into slices and repeat the step above until all ingredients are used. Enjoy with tamari (or soy sauce) and extra kewpie.
