Quick udon satay

Ingredients
- 90g Udon noodles
- 1 tbsp rice bran oil
- 50g button mushrooms
- 100g brocolli
- 2 cloves garlic
- 1 tsp fish sauce
- 1 tbsp spy sauce
- 1 tsp crunchy peanut butter
- Spring onion to serve

Method
- Put water in to boil. Cook the noodles until al dente.
- Fry mushrooms, garlic, broccoli.
- Add soy sauce, fish sauce, peanut butter and 2tbsp noodle water to the mushrooms and broccoli pan, cook for 2 minutes.
- Strain the noodles and add them to the pan, cook for 1 minute.
- Serve and top with spring onions.
