Theme: One Bowl Wonder
Rainbow Harmony Bowl

Ingredients
- seasonal vegetables (Carrots, green beans, yellow beans, broccoli, water chestnuts) 1 cup
- Tofu 200g
- Kimchi 1/2 cup
- Black rice 1/8 cup
- white medium grain rice 1 cup
- bonito flakes
- Eggs 2
- Garlic (3 cloves crushed)
- Valcom Pad Thai stri-fry paste
- soy sauce to taste
- salt and pepper to taste
- bean sprouts 200g
- cooking oil 2tbsp

Method
- Cook the rice - Mix black rice and white rice together. Rinse well and cook in a rice cooker according to normal rice settings. Set aside once done.
- Air fry the Tofu - Cut tofu into small cubes. Air fry at 200°C for 10 minutes until golden and slightly crispy. Set aside.
- Start the stir fry base - Heat oil in a wok over medium heat.Add crushed garlic and sauté until fragrant.
- Scramble the eggs - Add eggs and scramble gently until just cooked and fluffy.
- Add the veggies - Add mixed vegetables and sauté for a few minutes until slightly tender but still vibrant.
- Add bean sprouts and air-fried tofu. Toss gently to combine.
- Season and flavour - Add: Valcom Pad Thai Stir Fry Paste (½ bottle), Soy sauce, Salt & pepper. Mix well so everything is evenly coated.
- Add kimchi and a generous sprinkle of bonito flakes. Mix through for deep umami flavour.
- Combine with rice - Add the cooked black & white rice mixture. Toss gently until everything is perfectly combined and heated through.
- Serve and Enjoy - Serve hot and enjoy your Rainbow Harmony Bowl – comforting, nourishing, and full of vibrant flavours
