Red Curried Lamb Shanks with Sweet Potato and Rice

Ingredients
- 6 Lamb shanks
- 2 sweet potatoes
- Bunch of coriander
- 5 limes
- 1 can coconut cream
- 2 tablespoons fish sauce
- Half a jar of red curry paste
- 500mls chicken stock
- 1 brown onion

Method
- Brown lamb shanks and put in slow cooker.
- Peel sweet potatoes and chop into large cubes then add to slow cooker.
- In a pan heat 1 tablespoon of oil and cook diced brown onion. Add red curry paste and stir. Add coconut cream, fish sauce and chicken stock. Bring to the boil and then pour over lamb in slow cooker. Cover and put on high then cook for 8 hours.
- Prepare rice in rice cooker.
- Pick coriander leaves and juice limes. Stir through sauce in slow cooker.
- Serve rice and add lamb shanks, sweet potatoes and sauce. Enjoy!
