Ingredients
- 2 teaspoons minced garlic
- 1 teaspoon minced ginger
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons sesame oil
- 2 tablespoons red curry paste
- 1/2 cup coconut milk
- 1/2 cup water
- 20 frozen dumplings of your choice
- 1/4 cup thinly sliced spring onions
- 2 teaspoons toasted sesame seeds
- Chilli oil
- 5 cups chopped bok choy
- Coriander for topping
Method
- Preheat oven to 190 C degrees.
- Stir garlic, ginger, soy sauce, rice vinegar, sesame oil, curry paste, coconut milk and water in a casserole dish. Add bok choy and toss lightly. Top with dumplings and cover casserole dish with foil or a lid.
- Bake in preheated oven until dumplings are heated through, about 25 minutes.
- Divide dumplings and bok choy among plates and top with sauce. Top with coriander, spring onions, sesame seeds and chilli oil.
