Red curry tofu

Ingredients
- 1 Tbs Thai red curry paste
- 300 g tofu sliced
- 200 g green beans chopped
- 400g red capsicum chopped
- 150 g zucchini sliced
- 2 Tbs vegetables stock
- 30 g shallots sliced
- 200 g bean shoots
- 15 g chopped corriander

Method
- Chop vegetablesSlice tofu
- Stir fry tofu and Thai red curry paste for 3 minutes
- Add red capsicum, zucchini, green beans and stock. Stir fry for 5 mins or until vegetables are to your liking.
- Plate up and top with bean shoots, coriander and shallots.Enjoy
