Theme: One Bowl Wonder
Salmon Poke Bowl

Ingredients
- 4 fillets of salmon
- 1 bunch of broccolini
- 2 Lebanese cucumbers
- 2 avocados
- 2 packs of microwaveable rice
- 1 small pack of ready made slaw (no dressing necessary)
- Kewpie
- Okonami sauce
- Sesame seeds
- 2 tbsp neutral oil

- KEWPIE - MAYONNAISE 50% REDUCED FAT
Method
- Chop cucumber and avocado into bite size pieces.
- In a small pan, heat 1 tbsp of oil over medium heat.
- Fry broccolini until slightly browned but still crunchy (about 4 mins).
- Remove broccolini and set aside.
- Heat a further tbsp of oil in the same pan over a medium heat.
- Fry salmon to your liking.
- Microwave rice by following instructions on the packet
- Layer your bowl with rice on the bottom, followed by salmon, slaw, cucumber, avocado and broccolini.
- Pull it all together by topping the meal generously with kewpie, okonami sauce and sesame seeds.
