SAN Choi bow

Ingredients
- 1 tablespoon Peanut oil
- 1 teaspoon Sesame oil
- One clove Crushed garlic
- 1 tablespoon grated Fresh ginger
- For chopped Green shallots
- 500 g Lean pork mince
- One red capsicum finely diced
- 230 g can water chestnuts roughly chopped
- 2 tablespoons hoisin sauce
- 2 tablespoons of oyster sauce
- 2 tablespoons of dry sherry
- 2 tablespoons of fresh coriander
- One gem lettuce
- Hoisin sauce for serving
- One finely grated carrot
- 3 florets of broccoli

Method
- Heat oils on a medium heat, add garlic, ginger and shallots, Cook two minutes.
- Add mince and stir until brown
- Add capsicum, carrots, broccoli, chestnuts, oyster sauce, hoisin sauce, and sherry, simmer for three minutes until sauce thickens
- Remove from heat, add coriander, mix
- Serve in lettuce cups with hoisin sauce
