Theme: One Bowl Wonder
San Choy Bao

Ingredients
- 1 TBSP Peanut Oil
- 2 garlic cloves
- 4 spring onions (whites & green)
- 1/2 TSP minced Ginger
- 500g chicken mince
- 200g Can Water Chestnuts
- 6 Button Mushrooms
- 2 Carrots
- Lee Kum Kee San Choy Bao Sauce

Method
- Heat oil in a large frypan. Add ginger, garlic and white part of spring onions. Stir for 30 seconds and then add mince.
- Cook for 2 minutes then add water chestnuts, mushrooms, carrot and cook until the carrot is softened and mince is cooked through.
- Add Lee Kum Kee Ready Sauce San Choy Bao
- Cook for a further 2/3 minutes until everything comes together and isCoated in the sauce. Serve with fresh lettuce cups, chilli oil and crushed peanuts (optional)
