San Choy Bow (Chinese Lettuce Wraps)

Ingredients
- SAUCE - 2 tsp cornflour / cornstarch, 3 tbsp water, 2 tbsp light soy sauce, 1 tsp dark soy sauce, 2 tbsp oyster sauce, 1 tbsp sesame oil , and 2 and 1/2 tbsp Chinese cooking wine
- 500g pork mince
- 2 cloves of garlic, 2 tbs minced ginger, 200g (1 can) chestnuts (diced), 6 baby corn (diced), 1 small carrot (diced), 6 mushrooms (diced) and 1 small onion (diced)
- Lettuce cups (cos lettuce)

Method
- To make the sauce, combine all the ingredients for the sauce except for the cornflour and water. Mixed separately in a small bowl until no lumps. Then combine with other sauce ingredients.
- Heat up 1 tbsp of peanut oil in the pan on medium heat. Add the garlic, ginger and toss. Then add the onion until cooked through.
- Add the pork to the pan, cooking on medium high, and cook until white and juices from pork have evaporated
- Add the vegetables and cook for a further 5 minutes, carrot should be soft.
- Add the sauce to the pan and cook for another 30 seconds, stirring through.
- To serve, spoon some Filling into a lettuce leaf and enjoy!
