Satay tofu and veggie fried rice

Ingredients
- Basmati rice
- 2 spring onions
- Coriander
- 2 chillies
- 420g corn kernels
- 400g peanut satay tofu
- 330g stirfry mix
- Stir fry sauce
- Roasted peanuts
- 2 tbs soy sauce

Method
- Fill a saucepan with water and bring to boil. Cook rice in boiling water for 12 minutes. Drain
- Thinly slice spring onions. Chop coriander. Slice chilli
- Drain and rince corn. Quarter tofu
- Heat 1 tbs oil in large frypan. Cook tofu until golden. Remove from pan
- Heat 2 tbs of oil in same pan. Stirfry the vegetable mix and corn for 1 minute. Add stirfry sauce cook for 2 minutes.
- Add rice, spring onion, coriander, chilli and 2 tbs of soy sauce to vegetable and cook for 1 minute. Chop peanuts. Divide fried rice and tofu among bowls and scatter peanuts to serve
