Satay Tofu Noodles

Ingredients
- 2 packets OBAP sweet potato noodles
- Sesame oil
- Stir fry vegetables of your choice (approx half a kilo)
- Block firm tofu (approx 400-500g)
- Block silken tofu (approx 300g)
- One 400ml can of coconut cream/milk
- 1/2 cup Peanut butter
- 1 tablespoon tamari
- Juice of one lime (plus more lime to garnish)
- Half a tablespoon of chilli flakes/or one tablespoon of sriracha sauce (or more to cater to your chosen spice level)
- 1 tablespoon maple syrup
- Sesame seeds
- Coriander

Method
- Roughly dice firm tofu then stir fry in a dash of sesame oil until golden brown, put aside for later
- Boil noodles as directed on packet (approx 8 mins)
- While the noodles are boiling, make the satay sauce by blending the silken tofu, can coconut milk/cream, peanut butter, juice of one lime, tamari, maple syrup & chilli flakes/sriracha until smooth
- Stir fry your chosen vegetables in a dash of sesame oil for 5 minutes or until reached desired texture, then add the sauce and stir fried tofu, give it all a good stir until warm and evenly mixed together
- Serve into 4 portions, garnished with sesame seeds (option - lightly toast the seeds in a pan for a couple of minutes until very lightly golden for some extra flavour!), coriander and a slice of lime. Bon appétit!
