Theme: One Bowl Wonder
Seafood Laska

Ingredients
- Oil
- 1 Onion
- 2 Red chilly
- 1 teaspoon Fresh Ginger
- 2 cloves Fresh garlic
- 2 roots Fresh lemongrass
- 1 tablespoon Coriander stalk
- 1.5 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1 teaspoon tamarind paste
- 200 mos coconut milk
- 1 teaspoon fish sauce
- 200 mls seafood stock
- 1 fillet of Bream
- 20 green prawns de veined
- 200 grams Rice noodles
- 200 grams fresh beansprouts
- 1 teaspoon rice wine vinegar
- 1 teaspoon caster sugar
- 1 finger size of cucumber
- Small handful of coriander
- 1/4 small red onion

- OBENTO - RICE WINE VINEGAR
Method
- Fry up onion until clear on medium heat. Add chillies, ginger,garlic,lemongrass,coriander stalk,turmeric,cumin,paprika and tamarind paste.
- Cook for 5 minutes stirring until all is soft and pasty
- Place all the cooked ingredients into a blender and blend up until the paste in smooth.
- Once blended transfer back to pan on medium heat and add coconut milk, fish sauce and stock. Stir until simmering. Add Bream and cook until tender.
- Whilst the bream is cooking boil water place noodles in a bowl and poor in the boiling water so it covers noodle.
- Back to pan. Once fish is tender add prawns and mix through until a nice pink colour is seen.
- Finally add bean sprouts and mix through until warmed through. Remove pan from heat
- Set a small bowl aside and add chopped cucumber (some more chilly if you want) red chopped onion, rice vinegar,sugar and coriander and mix thoroughly ready to garnish this magnificent meal from me being Loza 😆
- Finally add the drained noodles between 2 large bowls and spoon the Laksa into the bowls. Garnish and enjoy my masterpiece
