Seafood stew

Ingredients
- Mussels, squid rings, Atlantic salmon fillets, salt, pepper, flour, tomato, parsley, garlic, bread crumbs, Chardonnay, rice wine vinegar, almond, onions, sugar, fish stock
- Olive oil
- Salmon fillets, mussels, squid rings

Method
- Purée the tomatoes with sugar
- Grind the parsley, garlic and bread crumbs with 1 cup fish stock (not too fine)
- Coat the salmon with flour, salt and pepper and shallow fry till golden brown. Keep aside. Fry the prawns till golden brown
- Boil the mussels with remaining fish stock for 5 minutes. Separate the mussels from the sauce.
- Fry onions in olive oil till translucent. Add purée, parsley- almond- breadcrumbs mixture. Cook for 3 minutes
- Add sauce, rice wine vinegar, Chardonnay and bring to a simmer
- Add fish, mussels, squid. Simmer till squid is done (approx 5 minutes).
- Serve with rice and lemon wedges
