Ingredients
- 2 cups sushi rice
- 1/2 cup rice wine vinegar
- 2 tbsp mirin
- 1tsp salt
- 2 tbsp white sugar
- Obento Yaki Nori seaweed sheets
- 425g can of tuna
- Kewpie mayonnaise (sriracha and normal)
- Half Lebanese cucumber
- Half avocado
- Pickled ginger
Method
- Wash sushi rice and cook according to packet directions. Combine vinegar, mirin, sugar and salt in a small saucepan and bring to boil. After rice has rested, put into clean baking sheet and mix the vinegar through. Allow to cool slightly.Assemble ingredients for filling (mix drained tuna with mayonnaise, julienne cucumber and chop avocado and ginger into strips).Place seaweed sheet onto bamboo mat and cover with 1/3 cup of cooked rice. Arrange a selection of fillings in a line near and parallel to you. Roll and cut to desired length. Serve with soy sauce Enjoy!
