Sesame chicken

Ingredients
- 1 ½ pounds boneless, skinless chicken breasts or thighs, cut into bite-sized 1 cup cornstarch2 large eggs½ cup all-purpose flourSalt and pepper to tasteVegetable oil, for frying2 tablespoons sesame seeds, toasted2 green onions, thinly sliced (for garnish)
- For the Sauce:⅓ cup soy sauce¼ cup honey2 tablespoons rice vinegar1 tablespoon brown sugar2 cloves garlic, minced1 teaspoon grated fresh ginger1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Method
- 1. Prepare the ChickenStart by cracking the eggs in a large bowl and whisk them together. In a separate bowl, mix the cornstarch, flour, salt, and pepper until well combined. This will be your coating for the chicken!
- 2. Coat the ChickenTake the chicken pieces and first dip them into the egg mixture to coat them lightly. Then, dredge them in the cornstarch-flour mixture until they’re fully covered. This will help make the chicken crispy when fried. Set the coated chicken aside for a moment.
- 3. Fry the ChickenIn a deep pan or wok, heat vegetable oil over medium-high heat until it reaches around 350°F (175°C). Fry the chicken pieces in small batches to avoid crowding, which helps them crisp better. You’ll want to fry them for about 4-5 minutes, or until they turn golden brown and crispy. Once done, transfer them to a plate lined with paper towels to drain any excess oil.
- 4. Make the SauceWhile the chicken is frying, take a small saucepan and combine soy sauce, honey, rice vinegar, brown sugar, minced garlic, and grated ginger. Heat over medium heat and bring to a gentle simmer. The combination of sweet and savory smells is delightful!
- 5. Thicken the SauceNext, take the cornstarch slurry and slowly whisk it into the simmering sauce. Keep stirring for about 1-2 minutes until the sauce thickens up nicely.
- 6. Combine Chicken and SauceNow, it’s time to mix it all together! Add the fried chicken pieces into the saucepan with the sauce, tossing them gently to coat each piece evenly in that delicious glaze.
- 7. Garnish and ServeTransfer the sesame chicken to a serving bowl. Sprinkle toasted sesame seeds and sliced green onions on top for a burst of flavor and color. Serve it right away with steamed white rice or your favorite side dish.I served mine with Fried rice and spring rolls !! :)
