Shanghai Noodle Stir Fry

Ingredients
- 2 carrots, peeled and cut into rounds
- 1 red capsicum, cut into 3 cm batons
- 1 bunch Chinese broccoli, cut into 3cm lengths
- 2 sheafs Hakubaku Udon noodles
- 400g beef mince
- 1 x 120g packet Lee Kum Kee Shanghai Stir Fry Sauce
- 1 tablespoon vegetable oil

Method
- Cook the noodles according to the packet instructions. Drain and set aside.
- Heat the oil in a wok. Add the beef mince and brown. Add the vegetables and stir fry.
- Add the Lee Kum Kee Shanghai Stir Fry Sauce and noodles, tossing to combine. Divide among 4 bowls to serve.
