Shiitake tofu perilla soba

Ingredients
- Soy sauce
- Mirin
- Cooking sake
- Kombu
- Dried bonito flakes
- Soba noodles
- Firm tofu cubed
- Perilla finely sliced
- Shiitake mushroom sliced

Method
- Mentsuyu: In a saucepan, add ½ cup sake, 1⅛ cup mirin, and 1 cup soy sauce. Add 1 piece kombu and 1 cup dried bonito flakes. Slowly bring it to a boil over medium-low heat.In another saucepan add soba noodles to boiling water for 4 minutes
- Mentsuyu: reduce the heat to low and simmer for 5 minutes. Then turn off the heat and let it cool.After a minute, To boiling soba noodles, add cubed tofu to warm it up . Drain once noodles have boiled for 4 minutes
- Shiitake mushrooms - wash, slice, and saute in pan - can add a splash for mentsuyu To plate, place soba noodles, tofu, shiitake in bowl. When ready to serve mix 2 tablespoons mentsuyu to 6 tablespoons water. Add to soba bowl. Top with bonito flakes and finely cut perilla leaves for freshness. Garnish with nori
