Shoyu Ramen with Edamame & Bok Choy

Ingredients
- 1 1/2 tbsp dried wakame
- 2 portions Ramen noodles, cooked al dente and drained
- 800mL shoyu broth (50mL Obento mirin, whole chicken, onion, carrot, leek, shiitake mushroom, garlic peppercorns - simmered for 3 hours and strained)
- 100g spinach, blanched
- 1 baby bok choy, blanched
- 100g edamame, blanched
- 3 soft boiled eggs, halved
- Garlic chives, chopped to garnish
- Toasted sesame oil, for drizzling

Method
- Rinse the wakame and rehydrate in a bowl of cold water. Drain well.
- Quickly and evenly divide the warm drained noodles between bowls and pour the hot shoyu broth over.
- Add the wakame, blanched vegetables, boiled eggs. Assemble on top of the noodles and broth.
- Garnish with garlic chives and finish with a drizzle of sesame oil. Enjoy!
