Slow cooked lamb shank Massaman Curry

Ingredients
- 2-4 lamb shanks
- 1 jar Valcom massaman curry paste
- 1/2 Sweat Potatoe, chopped
- 2 carrots, chopped
- 1 can coconut milk
- Peanut oil
- Flour
- Crushed peanuts to garnish
- 1 onion, diced

Method
- Optional step, but recommended.Dust lamb shanks in a little flour and cook in peanut oil to brown the outside of the meat.
- Turn on slower cooker to high.Add some peanut oil and add curry paste.
- When curry paste turns fragrant, add lamb shanks, sweet potato, carrots, onions and coconut milk to slow cooker.
- Arrange ingredients so they’re covered in sauce. Put lid on and cook on high for 5 hours, or until lamb shanks are tender and falling off bone.For crunchier vegetables, add a few hours into the show cook.
