Slow cooked lamb shank massaman curry

Ingredients
- 2 lamb shanks
- 1/2 jar massaman curry paste
- 1 can coconut milk
- 2 tsp chicken powder
- 1/2 cup water
- 2 potato’s
- 1 brown onion
- Roasted peanuts to garnish
- Corriander to garnish
- White rice to serve

Method
- Heat oven to 180. Combine curry paste, coconut milk, chicken powder & water in the bottom of a glass or ceramic baking dish
- Chop potatoes & onions into chunks. Add lamb, onion and potatoes to the dish and cover with foil.
- Bake for 4-5 hours depending on the weight of your lamb. Uncover & finish in the oven for 30-60 minutes.
- Garnish and serve with white rice
