Smoked Chicken and Soba noodles in Dashi broth

Ingredients
- 1 packet Soba Noodles
- 40g dashi granules
- 1/4 cup sake
- 1 tbsp dark brown sugar
- 1 smoked chicken breast
- 6 spring onions
- Lemon peel
- Togarashi
- 1250ml water

Method
- Put on a pot of water to boil for your noodles. Turn on the grill to 180 degrees.
- Julienne your lemon peel (you will want about 5 pieces per bowl - set aside. Trim your spring onions into 5cm batons.
- Put the onions under the grill until they soften and brown (about 10-15 minutes). Remove and set aside when ready.
- Put your dashi granules and sugar into a saucepan. Add the water and sake. Over medium heat, stir until dissolved then add your chicken breast. Let this come to a simmer.
- When the broth is simmering and the chicken is warmed through, remove your chicken and start cooking the soba noodles according to packet directions. Slice the chicken.
- When the noodles are ready, drain them and dish them into your bowls. Add your broth. Top with chicken slices, lemon peel, onion batons and a shake of togarashi.
