Soba noodle salad with salmon

Ingredients
- Soba Noodles
- 1/4 cup Rice wine vinegar
- 2 Tbl Soy Sauce
- 1 teaspoon sesame oil
- 1 tablespoon maple syrup
- 2 tablespoons toasted sesame seeds
- 1 tablespoon tahini
- 2 tablespoons mayo
- Spring onion green
- 2 grated carrots
- cucumber
- avocado
- salmon
- edamame
- teaspoon of ginger
- 1 garlic clove

Method
- Boil water for soba noodles, cook for 4 mins
- to make the sauce combine rice wine vinegar, soy, sesame oil, ginger, garlic, mayo, tahini and maple syrup
- Heat pan to cook salmon
- chop spring onion, green ends only
- grate carrot
- heat edamame in a bowl with water for 3mins
- chop cucumber finely and salt then cover with rice wine vinegar and water. place in fridge to pickle for at least 10mins
- combine all elements and top with sesame seeds and enjoy
