Speedy Green Chicken Stir Fry

Ingredients
- 500g Chicken tenderloins
- 2 Tbs Valcom green curry paste
- 400 ml Coconut cream
- 225g Valcom bamboo shoots
- 1 cup Broccoli, chopped
- 1 cup Green beans, chopped
- 2 Tbs Vegetable oil
- 2 Tbs Fish sauce
- 1 Tbs Sugar
- Thai basil, to serve
- Lime leaves, finely sliced, to serve
- Steamed rice, to serve

Method
- Slice chicken into 1 cm strips, chop broccoli and beans.
- Heat 1 Tbs oil in large fry pan over med-high heat. Stir fry in batches the beans, then broccoli for 2 min each. Remove to a bowl and set aside.
- Heat remaining 1 Tbs oil in same pan, and stir fry sliced chicken for 5 min until cooked through. Add curry paste and fry for 1 min. Add coconut milk and bring to boil.
- Return cooked beans and broccoli to the curry. Add in fish sauce and sugar to taste.
- Garnish with Thai basil and lime leaves and serve with steamed rice.
