Speedy soba veg bowl

Ingredients
- Hakubaku Organic Soba noodles
- One carrot
- Half a small cucumber
- 1 cup blanched edamame beans
- 1 cob corn
- 1 stick celery
- 3 eggs
- 1/4 cup roasted cashews
- Black sesame seeds for serving

Method
- Cook noodles according to packet instructions. Divide between 3 bowls
- Chop or shred carrot, chop cucumber and celery and divide veggies between the bowls.
- Shell edamame beans and divide between bowls.
- Cook corn in microwave, chop off kernels and divide between bowls.
- Fry 3 eggs in tablespoon oil. Add 1 egg to each bowl
- Divide cashews between bowls
- Sprinkle each bowl with sesame seeds. Enjoy!
