Spicey Tofu Thai Green Curry

Ingredients
- 1 Brown onion
- 1 tablespoon garlic and giner paste
- 1 tablespoon olive oil
- 300g firm tofu
- 2 cups button mushrooms
- 200g green beans
- 1 red capsicum
- 1/2 cauliflower
- 1 teaspoon vegan fish sauce
- 1 teaspoon sugar
- 1 teaspoon chilli flakes
- 400 ml coconut milk

Method
- Fry up onion and garlic/ginger in oil for 2 minutes
- Cut up tofu and cook in sandwich press or air frier separately
- Chop up vegetables and add to fry pan. Cook for 5 minutes.
- Add 1/2 jar coconut milk and tofu to pan. Cook for 5 minutes.
- Add rest of coconut milk, fish sauce, sugar and chilli. Cook until vegetables are soft.
- Serve on jasmine rice.
