Spicy cooked Tuna handrolls

Ingredients
- Nori
- Sushi rice
- Rice wine vinegar
- Sugar
- Salt
- Cooked tuna
- Avocado
- Cucumber
- Black sesame seeds
- White sesame seeds
- Kewpie mayo
- Siracha
- White pepper
- Sesame oil
- Fried shallots
- Pickled ginger
- Sushi and sashimi soy sauce

Method
- Cook sushi rice as per packet instructions. Once cooked, remove from heat and add rice seasoning (rice wine vinegar, sugar, salt). Set aside on tray to cool.
- Slice avocado and cucumber into thin strips.
- Add cooked tuna, kewpie mayo, salt, white pepper and sesame oil to a bowl and mix.
- Lay nori sheet shiny side down and spread rice across the sheet, pressing down. Turn over and add a line of tuna, cucumber and avocado. Roll using a sushi rolling mat.
- Slice into small pieces. Sprinkle with white and black sesame seeds, drizzle with kewpie mayo and siracha and top with fried shallots. Enjoy with pickled ginger and soy and sashimi soy sauce.
