Spicy Mayo salmon bowls

Ingredients
- 1tbs Kewpie mayo
- Salmon fillets x2 cut in cubes
- Nori pieces
- 2tsp smoked paprika
- 1tsp garlic granules
- 1tsp parsley
- 1tbs soy sauce
- 1tbs sriracha
- 1ts sesame seeds
- 2 tsp parsley
- 2 cups Coconut rice
- 1tsp soy sauce
- 1 cucumber
- 1 avocado
- Pickled red onion
- Spring onion fresh chilli and sesame seeds to garnish (optional)
- 1/2 can coconut milk
- 2 cups Jasmine rice
- 1 tbsp ghee
- 2 cups water for rice

Method
- For rice- Rinse the rice under cold water until the water runs mostly clear.In a saucepan, add the rice, coconut milk, water, ghee, salt, and sugar.Bring to a gentle boil over medium heat.Once boiling, reduce to low, cover with a lid, and simmer for 12–15 minutes until the liquid is absorbed.Turn off the heat and let the rice sit covered for 5 minutes.Fluff with a fork before serving.
- Cut salmon fillets into cubes. In a bowl mix cubed salmon with paprika, garlic powder, soy sauce, chopped parsley. Heat on and fry with oil of choice for 5-7 minutes until salmon is golden.
- Mix Kewpie mayonnaise and sriracha in a small bowl.
- Add cooked rice to a bowl and assemble the chopped cucumber slices, sliced onion, avocado, salmon pieces and nori pieces.
- Finish with the scriracha mayo on top along with spring onion, fresh chopped chilli, and black and white sesame seeds! Enjoy
