Spicy miso ramen

Ingredients
- 250g chicken thigh
- 250g mushrooms
- 4 garlic cloves
- 100g shallots
- 1 tbsp grated ginger
- 1 tbsp miso paste
- 1 tbsp soy sauce
- 2 tbsp rice wine vinegar
- 1 chicken stock cube dissolved in boiling water
- 125g dried ramen noodles
- 100g Pakistan choi
- 1 tbsp chilli oil

Method
- Heat saucepan with oil add chicken and brown for 10min. Remove from pan.
- Fry mushrooms for 5 min add garlic, shallots and ginger.cook for 5.
- Stir in miso, soy sauce and vinegar and add stock. Bring to boil and add noodles.
- Shred chicken and return to pot with pak choice. Add a touch of chilli.
