Spicy Peanut Noodles

Ingredients
- 200g dried noodles
- 2 tbsp natural peanut butter
- 1 tsp minced garlic
- 4 tsp oyster sauce
- 4 tsp light soy sauce
- 4 tsp rice wine vinegar
- 4 tsp chilli crisp, plus extra to serve
- 1/2 cup finely sliced green onion, plus extra to serve
- 4 tbsp crushed salted peanuts
- 3 tbsp sesame oil

Method
- Cook noodles - Cook the noodles according to the packet directions. Just before draining, scoop out ½ cup (125 ml) of the noodle cooking water, then drain the noodles in a colander. Rinse very briefly under tap water to remove the excess starch, then shake off any excess water.
- Sauce - Meanwhile, put the sauce ingredients in a medium bowl in the order listed. No need to mix just yet.
- Sizzling oil - Heat the oil in a small saucepan* or small frying pan* over medium heat. Once hot, pour the oil over the sauce in the bowl. Enjoy the small sizzle, then stir to combine.
- Toss - Add the green onion, hot noodles and ¼ cup (60 ml) of the reserved noodle cooking water to the bowl. Toss well, using more reserved noodle cooking water as needed to loosen. Serve sprinkled with peanuts and extra chilli crisp, if desired.
