Spicy pork noodles with broccoli, pumpkin and capsicum.

Ingredients
- Pack of Hakubaku organic udon noodles
- 1 tablespoon peanut oil
- 500g pork mince
- 1 red capsicum
- 1 cup diced pumpkin
- 1 cup broccoli
- 2 minced garlic cloves
- Thumb-sized piece of ginger
- 2 tblsp sambal oelek
- 3 tblsp ABC Kecap Manis
- 1 tblsp light soy sauce

- HAKUBAKU - ORGANIC UDON NOODLES
Method
- Mix the sauce ingredients into a small bowl and set aside.
- Cook the Udon noodles according to the packet and set aside to drain.
- Heat oil in wok and add vegetables, garlic and ginger until cooked but still firm. Put vegies into a bowl and set aside.
- Add pork to the hot wok and break it up with spoon or spatula. Return vegies to the pan and add sauce. Stir.
- Add noodles and mix with pork and vegetables. Recipe is “borrowed” from Sarah Pound’s “Wholesome” cookbook.
