Spicy Pork With kimchi

Ingredients
- MARINADE:
- 1/3 cup gochujang (Korean chilli paste)
- 1/4 cup Asian pear, peeled and roughly chopped
- 1 Tbls ginger, peeled
- 1 Tbls soy sauce
- 1 Tbls sesame oil
- 1 Tbls sugar
- 1 Tbls Shaoxing wine
- 2 tsp gochugaru chilli flakes
- MAIN DISH:
- oil for frying
- 800g pork shoulder, sliced thin
- 1 onion, sliced thin
- 2 Scallions, cut into 1.5 inch batons
- 4 green chilli's, cut into 1 inch pieces
- 200g kimchi
- TO SERVE:
- steamed rice
- lettuce leaves

Method
- Blend all the marinade ingredients together using a food processor or Thermomix. In a medium bowl add the marinade to the pork and mix through, cover and refrigerate for at least 2 hours (up to 8 hours).
- After the marinating time is up add a tablespoon of oil to the wok or pan over medium high heat, add the onions and chilli's and cook for 2 minutes tossing occasionally, add the scallions and cook for another minute. Transfer the onion mixture to a large bowl or platter.
- Add another tablespoon of oil to the wok, add the kimchi and fry off until the liquid has evaporated. Transfer to the bowl with the onions.
- Working in batches heat another tablespoon of oil in the wok and add 1/3 of the pork. Fry until the pork starts to brown, transfer to the bowl with the onions and kimchi and repeat with another 1/3 of the pork. After you have cooked all of the pork add everything back into the wok and cook for a further 2-3 minutes until heated through. Taste and season with salt if needed.
- Serve the pork in individual bowls with rice and lettuce on the side. Alternatively you can serve the pork on a platter and let everyone help themselves.
