Spicy Prawn Salad

Ingredients
- SALAD:
- 150g mixed lettuce leaves (or other salad greens)
- 1/4 cup cilantro leaves
- 2 red radishes, thinly sliced
- 300g raw prawns (large or jumbo)
- 1 Tbls sesame oil
- DRESSING:
- 1 Tbls chilli oil
- 1 Tbls soy sauce
- 1 Tbls lime juice
- 1 tsp sugar
- 1 Tbls sesame paste
- 2 cloves garlic, crushed
- TO SERVE:
- scallions, thinly sliced
- chilli threads (optional)

Method
- Heat the sesame oil in a wok or pan on medium/high heat, add the prawns and cook for 2-3 minutes until they start to turn pink, turn and cook the other side for a further 1-2 minutes or until they are cooked through. Set aside to cool slightly.
- In a small bowl whisk together the dressing ingredients and set aside.
- Place the mixed lettuce, radish and cilantro into the serving bowls, top with the prawns. Drizzle over the salad dressing and toss through.
- Scatter over some scallions and chilli threads and serve.
