Spicy prawn sushi bowls

Ingredients
- 2 cups sushi rice
- 1 tbs neutral oil
- 700g peeled raw prawns
- 6 tbs Obento sushi seasoning
- Half an avocado, sliced
- One carrot, finely grated
- 1 medium cucumber, sliced
- 1 tbs sriracha
- 1 tbs lime juice
- 1 tbs grated ginger
- 1 clove minced garlic
- 3 tbs low sodium soy sauce
- 1 tsp sesame oil
- 2 tbs sesame seeds
- 2 tbs mayonnaise

Method
- Marinate prawns in lime juice, soy sauce, sesame oil, sriracha, ginger and garlic. Let marinate for 30 minutes.
- Prepare sushi rice as per packet instructions. Gradually add Obento sushi seasoning and fluff with a fork. Allow rice to cool slightly.
- In a frypan, heat oil and saute prawns 1 minute each side. Set aside on a plate.
- To assemble bowls. add rice then top with prawns, avocado , carrot and cucumber. Drizzle with mayonnaise and sprinkle with sesame seeds.
