Squid sushi

Ingredients
- Salt and pepper squid
- Nori sheets
- Sushi rice
- Red capsicum
- Cucumber
- Rice Vinegar
- Bamboo rolling maspread

Method
- Cook the rice in a rice maker as per it's instructions. Cook your chosen squid to its instructions. Finely slice the cucumber and capsicum into strips.
- Once cooked, combine the rice with the rice vinegar (40ml), as well as 1 tbs of sugar and 1 tsp of salt. Spread out evenly on a pan or tray to cool. Dice up the cooked squid
- Put a nori sheet on your bamboo mat. Spread a thin layer of rice roughly a 8cm wide on one end. Put a layer of squid and a few strips of capsicum and cucumber on top. Use the mat to roll up the sushi, and use a dab of water on the last bit of the sheet to help it stick
