Method
- Soak dried shiitake mushrooms until soft, then simmer them in a little soy sauce, sugar, and mirin until tender. Lightly pan-fry or grill the tofu until golden, then slice into strips. Set aside bonito flakes.
- Spread seasoned sushi rice evenly over a sheet of nori. Arrange shiitake mushrooms and tofu in a line across the centre, then sprinkle a small amount of bonito flakes over the fillings.
- Roll tightly using a bamboo mat, slice into bite-size pieces, and serve with soy sauce, wasabi, and pickled ginger.
