Method
- Cook sushi rice as per instructions on bag. Add Japanese vinegar and sugar once rice is cooked. Keep mixing until rice is cooled
- Brown chicken in oil. Once cooked add the teriyaki marinate and mix through. Cool.
- Place the nori on the bamboo mat. Spread the cooked rice on the nori. Spread with wet fingers.
- Add chicken/tofu, cucumber,peppercorn and mayonnaise. Begin to roll sushi in the mat. Wet edges to stick. Cute to desired length. I use a sushi cutter for accurate sizes
