Ingredients
- Sushi nori 5 pcs
- 1 tbsp mirin
- 1 tsp sugar
- 1 tbsp mayonnaise
- 1/2 tsp salt
- 1 cup sushi rice
- 1/4 cup Cooked chicken - either fried or roast
- 1/4 cup Carrots julienned
- 1/4 cup mushrooms sliced thinly
- 1/4 cup fried tofu sliced long and thin

Method
- Cook rice according to packet instructions.
- While waiting for rice to cook, prepare the other ingredients. Mix mirin and sugar in a bowl. Mix mayonnaise and salt in another bowl. Prepare meat and vegetables.
- Once rice has cooled down, mix through mirin and sugar mix.
- Assembly:1. Lie nori flat on a board with glossy side facing down. 2. Spread rice on the nori filling the square and leaving about 1 inch at the top.3. Spread mayonnaise and salt mix thinly on top of the rice. 4. Put the chicken, carrots and cucumber across the rice in a line close to the bottom of the nori sheet. Make the same with tofu and mushroom. 5. Roll the nori sheet from the bottom to the end of the nori sheet, making sure it is tight and seal the top with water.
- Once all the rolls are made, cut according to preference. You can cut in half to make a bigger sushi roll or in 1 inch size to cut in smaller pieces.
