Ingredients
- 1.5 cup of sushi rice
- 1 avocado
- 1/2 jar sundries tomatoes
- 50g Salted cashews
- 3 Yaki Nori (sushi) sheets
- Kewpie mayonnaise
- 1/4 Rice wine vinegar
- Salt
- Sugar
Method
- Boil rice and let cool
- Combine sugar, salt and rice wine vinegar and heat until sugar has dissolved. Add to rice and stir
- Put rice evenly on a 3/4 of a yaki Nori sheet. Top with avocado, cashews and sun-dried tomatoes. Roll the sushi sheets tightly and form into a roll.
