Sushi

Ingredients
- 2 sheets Obento Yaki Nori for Sushi
- 1 cup sushi rice
- 1 tbsp rice vinegar
- ½ tsp sugar
- ¼ tsp salt
- ½ cucumber, cut into thin strips
- 1 egg, cooked as thin omelette and sliced
- 2 tbsp Japanese mayonnaise
- Smoked salmon
- Fried prawn with cheese

Method
- Cook 1 cup of sushi rice according to package instructions. While still warm, mix with rice vinegar, sugar, and salt. Let cool slightly.
- Place a sheet of Obento Yaki Nori on a sushi mat or clean surface with the shiny side down.
- Spread a thin layer of sushi rice evenly over the nori, leaving about 2 cm space at the top edge.
- Place cucumber, smoked salmon, prawn, cheese and sliced omelette across the centre of the rice. Add a small drizzle of Japanese mayonnaise if desired.
- Carefully roll the sushi tightly using the mat or your hands. Seal the edge with a little water.
- Slice the roll in half.
