Sushi Cake Sandwiches

Ingredients
- Sushi Rice - 2 cups
- Sushi Seasoning - 4 tablespoons
- Seaweed Sheets
- Tuna - 425g
- Kewpie Mayonnaise- 2 tablespoons
- Avocado

Method
- Line a 20 x 20 tin with plastic wrap.
- Cook sushi rice according to directions on packet.
- Once cooked add sushi seasoning and stir. Spread rice out onto a tray to cool.
- Mix tuna with kewpie mayonnaise and slice avocado. Set both aside.
- To assemble:Place a sheet of seaweed on bottom of tin. Spread half of the cooked rice mix over the sheet. Spread the tuna mix followed by the sliced avocado. Add another sheet of seaweed, followed by the remaining rice. Add a final layer of seaweed and press down. Set in fridge.
- Slice into 16, serve and enjoy.
